Description
Follow the story of Broken Bones distillery in the desire to make Slovenian whiskey that would be elegantly combining the knowledge of traditional spirits production and the distinctive imprint of Slovenia.

The unique character of Broken Bones peated single malt distillate is the result of a combination of traditional Slovenian and Scottish making of spirits. Carefully selected combination of mostly unpeated malt and some peated malt, yeast and a combination of new barrels made of Slovenian oak and used barrels in which the distillate is nurtured, gives it a recognizably full, peaty taste.

In the development set, you cantaste the magic of maturing distillate in barrels in three steps - from fresh distillate (new make), over a 12-month-old distillate to Broken Bones Whisky, three years old.

Fresh distillate (New make)

Immediately after the distillation is completed, the new make contains about 70% alcohol. The sample in front of you however, ist diluted to drinkable 46%. At this poing, the taste of distillate is considerably sharp, with a pronounced aroma of barley, and merely hints that it will eventually mature into rounded, complex and elegant whisky.

12 months old distillate

The distillate was initially aged in Slovenian oak barrels, and then moved to the American oak barrels in which bourbon whisky was previously matured. Around one year of age the distillate starts to soften and show its potential with peated, fresh and fruity aromas.

Broken Bones Peated Whisky

After a minimum of three years in the barrels with careful nurturing and maturation, our peated distillate became Single Malt Whisky. Broken Bones Peater Whisky is complex and elegant whisky with full, floral, fruity aromas and a unique character.

Broken Bones About Whisky

How our whisky is made - from grain and fermentation to distillation and aging in a unique combination of Slovenian oak and bourbon barrels.

Milling and MashinG

We source all our malt from nearby regional producers and omplete the entire spirit-making process in our distillery. We begin by milling the malt, then mash it in stainless-steel mash tun, adding water at the optimal temperature to draw out the sugars. Water quality is essential: Slovenia’s alpine-pure water, with its distinctive mineral profile, supports longer wort fermentation, adding freshness and body to the whisky’s flavour.

Fermentation

The liquid wort from the mash tun is cooled and pumped into the washback. We add several types of yeast to ensure high flavour production fermentation. Along with maturation in selected barrels and the controlled distillation process, the richness of the flavours in our whisky comes from the long and carefully controlled fermentation cycle. The selection of the yeast and the temperature and duration of the process, which create our fruity, full-bodied, complex and elegant whisky, were refined through extensive experimentation. Our fermentation cycles last over 110 hours, which is considerably longer than the average of other producers. When the fermentation is completed our wash contains 8 % alcohol.

Distillation

After fermentation wash is slowly distilled by our distillery team in a controlled process of double pot distillation. The unique whisky we were after required equipment not easily available on the market, so we built our copper pot stills from scratch. During our testing period we also adopted a certain distillation protocol that we believe is essential for our full bodied yet elegant style of whisky, so everything is distilled strictly according to that procedure.

We currently have two styles - a classic fruity (Twis) and a peaty (Kika) Single Malt Broken Bones Whisky. Beside that we are also making a blended whisky that combines our classic whisky and a carefully selected grain whisky.

Maturation

The combination of different oak barrels gives our distillate a distinctive and well-developed flavour, even during the early stages of maturation.

Before filling the barrels, we dilute our new make spirit with purified water to 63% alcohol, arguably the optimal strength for maturation in wooden barrels. Here we should mention that over time a small amount of whisky evaporates from the barrels; the process distillers rather poetically refer to as 'the angels' share'.

Our whisky’s unique flavour also comes from the Slovenian sessile oak in which the spirit matures. These impart the desired full-bodied taste, with dominant fruity and floral notes. Prior to first use for the whiskies, Slovenian oak barrels host our wine brandy. For a more complex and elegant flavour, maturation also takes place in American white oak bourbon barrels. Our peated expression is made from peated malt and finished in barrels that previously contained the peatiest Scotch whisky from Islay for added punch.

While our whisky is maturing we provide the opportunity for you to taste the magic of the progress from new make spirit through to maturation in barrels of various types with our sample packs.
